Chipotle Cannellini Bean Hummus


Classic hummus gets a flavorful twist with cannellini beans and chipotle.


Ingredients:

  • 1 can cannellini beans, drained and rinsed

  • 1/4 cup tahini

  • 1/4 cup chipotle infused extra virgin olive oil

  • 1 garlic clove, finely minced

  • margarita mix

  • lime juice

  • salt and chili flakes

  • fresh cilantro, chopped

Preparation:

  1. Puree the beans, tahini, chipotle EVOO, and garlic in a food processor until smooth and creamy.

  2. With the machine running, add 1/4 cup margarita mix to thin.

  3. Transfer to serving bowl and top with fresh lime juice to taste, sea salt, and chili flakes.

  4. Garnish with chopped cilantro and serve with pita chips.
